Cooked this one tonight for dinner and it went down really well. The recipe is from Jamie Olivers Ministry of Food. I'm a big fan of Olivers' his recipes are simple, the ingredients are available in the supermarkets and the recipe works ! Try it if it works for you pass it on to friends and family, you will need:

Plain flour for dusting
1 x 500g pack of frozen puff pastry.
! Bushyleaze size trout (2.8lbs) filleted and skinned.
Olive oil
Sea salt & black pepper
4 tablespoons of black olive tapenade paste (tesco in amongst the jars of olives)
Fresh basil
2 ripe tomatoes
1 x 150g ball of mozzarella cheese
1 egg

Pre-heat oven 200C/400F/gas 6
Dust a large flat baking tray with the flour
Flour and roll out pastry until it fits you tray
Place on tray
Drizzle your fillets with olive oil and season with salt and pepper
Transfer fish to the centre of your pastry, side by side, thin sections of the fillets to the centre
Spoon the black olive paste onto the fish spread to a thin layer
Pick the fresh basil leaves and place them over the fish
Slice the tomatoes and lay them on the basil
Tear the mozzarella into pieces and scatter these on the top
Sprinkle with salt and pepper and drizzle with olive oil
Gather up all the sides of the pastry and push them together
Crack the egg into a cup, beat with a fork then brush all over the pastry

Place tray in bottom of the oven, place an empty baking tray on the shelf above so the pastry doesn't see too much heat, cook for 35 mins.

Went down a treat here with a few chips and stir fry veg and a couple of glasses of red for the chef !
