Try this one, it's really good.

Take two trout fillets and de-bone
Make a solution as follows

2 Pints Water
1/2 Cup salt
1/4 Cup Lemon Juice
1 Cup Honey
1/4 Cup Dark Rum

Mix all ingredients thoroughly, add fillets skin side up and soak for 2 hours. (I use a large plastic sandwich container)

Remove fillets and pat dry with paper towel.

Place on wire rack and air dry for 1/2 hour. You may get a glaze forming at this point.

Smoke for 20-30 mins skin side down depending on fillet size ( I use oak chippings in a standard shakespere type smoker)
